How we made it... Nutritional values

Our Colomba Spagnola is a baked sourdough product. Baked according to the traditional Balocco recipe, using only GM-free ingredients.

Ingredients

wheat flour - milk chocolate 15.3% (sugar - cocoa butter - milk powder - cocoa paste - emulsifier: soya lecithin - flavouring) - sugar - fresh eggs* - butter - cream filling 7.3% (sugar - glucose syrup - water - skimmed milk powder - sunflower oil - butter - alcohol - cream 2% corresponding to 0.1% of the total ingredients - stabilizer: pectin - preservative: potassium sorbate - flavourings) - sour black cherry filling 7.3% (sugar - sour black cherry puree 35% corresponding to 2.6% of the total ingredients - glucose-fructose syrup - gelling agent: pectin - acidity regulator: citric acid - flavourings) - natural yeast (wheat flour - water - yeast) - decoration 2.7% [amaretti biscuits grains 33.3% (sugar - apricot kernels 17.8% - egg* white - almonds 6.9%) - meringue grains 33.3% (sugar - wheat starch - egg* white powder) - chopped caramelised hazelnuts 33.3% (chopped hazelnuts 70% - sugar)] - glucose syrup - emulsifiers: mono- and diglycerides of fatty acids - alcohol - salt - skimmed milk powder - natural flavouring.
